Let's face it, sometimes as busy mom's and dad's we need to find short cuts now and then. So sometimes, yes, it's okay to use those store bought cake mixes. Are you with me...
Begin with your favorite cake mix brand and choose the flavor that you like. Make and bake these choosing the cupcakes option according to the box directions. These are usually pretty straight forward to follow and use minimal ingredients.
Most cake mixes will make 24 cupcakes. You can either choose to frost them or freeze some for future use if you won't need them all at once. (leave them unfrosted if you will be freezing them)
As the cupcakes are baking you can go ahead and make the frosting or icing for them unless you are using the store bought frosting.
Here is a simple recipe for Icing
1 and 1/2 cups icing sugar
3 tbsp. butter or margarine melted
1/2 tsp. vanilla extract (optional)
1 to 2 tbsp. of water or milk
Mix all together in a bowl and add more water or milk to reach desired consistency. If you want to color your icing mix then add a drop or two of your choice of food coloring.
Add toppings like colored sprinkles or confetti, edible pearls or gold dust, chocolate drops or any fruit topping you like.
Here are a couple of video clips that might help you out if you are new to baking or just want some extra tips.
